Ingredients: Apples.
6.5% alc./vol.
Maceration for 24 hours and fermentation at low temperature to develop textures and tannins. The juice ferments at low temperature, and frequent rackings are made in order to slow down and deplete the cider in natural yeasts. The bubble, very present, is the result of bottling without filtration. The presence of lees brings complexity to this natural not discorged juice.
