Trailblazing woman winemaker Yvonne Irvine creates an innovative new Pet Nat style in Ontario. First of their Pet Nat series, she co-ferments with peaches and sumac, creating a unique and unctuous fizzy little drink. With the sumac, she makes a tea with it before adding it to the ferment along with the peaches.
Unfiltered and bottled with lees.
No Sulphites added.
Region: Niagara, Ontario
Tasting Notes: bright acidity with stone fruit and tartness leant from the local fruit. A touch of baking spice, apricot, and lemonbalm round it out.
