Champagne Bonnet-Ponson Cuvée Perpétualle 'Non-Dosé' NV
Details
The Bonnet family's winemaking history began in 1862 with Grégoire Bonnet, one of the first growers in the village of Chamery. They are now a 5th and 6th generation of winemakers working together. Cyril, the newest generation of winemakers in the Bonnet family, started making wine after extensive education in 2013 alongside his father. He then initiated the conversion of the estate to organic farming and the development of alternative methods based on phytotherapy in the vineyard. In the winery, some of the wines are now vinified without sulfites, with the birth of a new vintage coming soon.
Grapes: 40% Pinot Noir, 30% Chardonnay, 30% Meunier.
40% reserve wines (blend of previous harvests known as “Perpetual Reserve”).
Tasting Notes: lemon curd, croissant, oyster shell, white florals
