Casa Mariol Vermut Blanc, like its famed Vermut Negre counterpart, is the result of reviving a century-old, family-owned wine business operating out of La Batea (just outside Barcelona) in an ancient town called Tera Alta. This white vermouth will be softer than a typical 'dry' vermouth, and is balanced with a bouquet of herbaceousness, a lick of fennel, some bitter citrus, and slowly easing into a touch of baking spice.
Traditionally this vermut should be in the afternoon on the rocks with a splash of seltzer, an lemon slice, and an olive! But you can put it literally wherever you like.
