Join us for an exclusive bartender takeover workshop featuring Shannon Marshall of Perch!
Shannon is the Bar Manager and Sommelier at Perch, where he leads a beverage program built on sustainability and seasonality. He develops the restaurant’s cocktail list, curates the wine list, and designs the beverage pairings that highlight local producers, fermentation and low-waste techniques. His background includes roles at a few of Canada’s Top 100 restaurants, including Dailo and Café Boulud, where he refined his approach to service, flavour balance, and guest experience. At Perch, Shannon brings together his passions for creative drink design, responsible sourcing, and team collaboration to deliver a beverage program that is both innovative and grounded in sustainability and strong hospitality values.
