Talented new Greek winemaker Chloe Chatzivariti is on the rise, experimenting at her family winery in the production of natural wines.
Her background is quite impressive, having studied oenology in France and Portugal, followed by a series of positions at wineries in France, New Zealand, Argentina, and Chile, before returning back to her native Greece. She experiments with new winemaking techniques while staying true to low intervention and natural winemaking practices. The grape variety used in this wine, Negoska, is a rare indigenous grape to Greece that does not see a lot of air time. She puts the grapes through carbonic maceration (whole-cluster fermentation) which is the process that Gamay grapes go through to make Beaujolais (aka, it makes the red wine light, juicy, bouncy, and deliciously crushable).
